Amanda offers expertise in general nutrition, sports nutrition, food allergies, and chronic disease management. She holds a Bachelor of Science in Nutrition Science and a Master of Science in Clinical Nutrition from the University of Pittsburgh. Amanda supports schools in Tennessee, promoting healthy lifestyles and accessible nutrition. Her motto, “every lifestyle, every culture, every meal”, encourages healthy eating while honoring different cuisine and heritage. Mindful
Mindful by Sodexo is an approach that focuses on transparency of ingredients, delicious food, satisfying portions, and clarity in message so that making Mindful choices becomes second nature.
Creating a balanced college experience helps develop habits that will continue through post-grad life. Mindful on Campus health & wellness programming offer manageable wellness tips, campus events, nutrition education and delicious recipes to help students maintain their overall health while they are with us at Trevecca Nazarene University.
Mindful offerings served in Apple Dining Hall meet stringent nutrition criteria based on the United States Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10% of calories as saturated fat, and is restricted in sodium, and cholesterol. Chefs in our test kitchen develop recipes to meet these criteria in a delicious fashion that helps you make healthy choices second nature.
75% of Simple Servings items also meet our Mindful criteria, which makes it an easy and healthy choice for guests who are focused on ingredients and portion size to control weight, blood sugar and other health issues.

Performance Nutrition
Many Trevecca students are athletes with unique, sport-specific nutrition needs. Meals and snacks are essential for training and recovery. Apple Dining Hall offers diverse stations with milk products, fruits, whole grains, proteins, and vegetables—so athletes can build performance plates with their preferred balance of carbs, fats, and protein. Entrées can be customized with just protein and/or vegetables to pair with other menu items. Athletes are welcome to return for as many plates as they need to meet their fueling goals.
Each meal period includes 3+ protein options: dairy, eggs, legumes, and poultry daily; beef, pork, and seafood rotate. Our fresh salad bar features leafy greens, hydrating vegetables, legumes, and toppings that support digestion, immunity, and recovery. Beverage stations additionally offer milk products and soy milk rich in energy, protein, potassium, and calcium—plus daily fruit and herb-infused water for hydration.
Simple Servings offers whole grains, legumes, grilled chicken, and vegetables. Daily staples include grilled chicken, sweet potatoes, and Idaho potatoes, with rotating proteins like fish, lean beef, and pork. House-made dressings complement mixed green salads. All items are free from 8 of the top 9 allergens (egg, milk, sesame, shellfish, soy, peanut, tree nut, wheat) and gluten—ideal for athletes with dietary restrictions.
For our athletes concerned about tracking their food intake or macro and micro-nutrients, our menu app, Everyday, gives student athletes access to nutritional information and ingredients of our menu items.
Plant-Forward Dining
A nutrient dense plant-based diet includes a variety of fruits, veggies, whole grains, nuts, seeds and legumes. It is important to include a variety of foods to meet nutritional needs.
Tips for Vegan and Vegetarians
Some key nutrients & where to find them:
- Protein – eggs, beans, lentils, tofu, nuts, seeds, yogurt, cottage cheese, soy milk
- Vitamin D – fortified milk, milk alternatives
- Calcium – fortified milk, cereal & alternative, tofu made (calcium sulfate), kale, broccoli
- Zinc – whole grains, beans, nuts, fortified cereals
- Iron – legumes, fortified cereals, whole grain bread
- Boost absorption with vitamin C: oranges, strawberries, tomatoes, broccoli, red peppers)
- Omega-3 – chia seeds, walnuts
- Vitamin B-12 – fortified cereal, fortified milk alternatives
