Trevecca Dining locations are equipped and dedicated to accommodating customers who have food allergies, Celiac Disease, or other dietary needs. Our managers communicate daily with customers to provide safe, healthy, and delicious options. Your campus dining experience should be enjoyable, and Sodexo takes pride in creating site-specific options where customers with allergies can safely choose and enjoy their meals. We want to meet one-on-one with anyone who has individual dining needs to ensure your dining experience is safe, delicious, and social.

Trevecca Dining Services, as of 2020, is a proud member of the FARE (Food Allergy Research and Education) database, to promote allergy awareness and improve the quality of life for students with food allergies. More information can be found on the FARE website at Preparing for College.

Simple Servings

The Simple Servings station in Apple Dining Hall provides safe and appetizing food choices for customers with food allergies, Celiac Disease, gluten intolerance, and those who prefer simple food. All foods served at this station are prepared with ingredients that do not contain milk, egg, wheat, soy, shellfish, peanuts, tree nuts, gluten, or sesame. The station uses separate equipment/utensils, preparation areas, and storage areas to minimize the potential of allergens or gluten in our Simple Servings foods.

The menu rotates each meal and includes a variety of protein (i.e., grilled chicken and beef, pork, fish, legumes, or lentils), vegetables (i.e., broccoli, carrots, or green beans), and starches (i.e., sweet potato, Idaho potato, and rice, polenta, or quinoa). There is a composed salad option and fresh cut fruit available daily.

The station is incorporated into the servery to allow students, even those without allergy concerns, to enjoy the food selections. We ask that guests do not bring food from other stations and only use the plates provided by our servers at Simple Servings.

Simple Servings team members are carefully trained to prepare and serve safe food. We provide Sodexo in-house training throughout the year for all employees. Trevecca Dining Managers, supervisors, and cooks also hold AllerTrainU certificates.

While Simple Servings station is designed to allow customers an easy way to avoid allergens and gluten, we encourage our customers with dietary needs to connect with our executive chef, registered dietitian, and general manager to ensure an enjoyable dining experience.

Made without Gluten

The Made without Gluten wall is a self-serve “pantry” in Apple Dining Hall with available pre-packaged items and dedicated appliances like a toaster, and waffle maker for customers with a gluten-free requirement. To maintain a safe area, we ask that students do not bring food from other stations to this counter.

By request at the Slices station, there is customizable cauliflower pizza crust made without gluten, and pasta made without gluten and marinara sauce during lunch and dinner meal periods. Procedures and policies are in place to reduce the risk for cross-contact.

If you have a food allergy, intolerance, or medical diet

For students with medical conditions that impact their ability to dine on campus, we strongly encourage a conversation with our Registered Dietitian, Executive Chef, and/or General Manager. In many instances, our dining team can easily assist with special requests.

Occasionally, Dining Services cannot meet a student’s medical need within normal service. We may request additional medical documentation to enable us to develop more specific meal plan accommodation. In this situation, we ask that the student register with the Associate Dean of Student Success and/or Coordinator of Student Disability Services, disabilityservices@trevecca.edu. Together, our departments work to serve our students with medical needs related to dining on campus. Trevecca Nazarene University Dining Servings Restricted Allergen Policy is available for review on request. Outside food items are prohibited from entering the Apple Dining Hall.

Menu Allergens

Our menu system provides ingredient statements specifically highlighting the top nine allergens: milk, eggs, shellfish, fish, tree nuts, peanuts, sesame, wheat & soy. Guests may check on the presence of allergens prior to planning their meals using the online menu, the Everyday App, and nutrition calculator viewing our daily menus. The absence of an allergen listed on posted or electronic product signage is not a guarantee that the product is free of the allergen. Each guest is responsible for communicating their allergy to a supervisor or manager to discuss suitable menu items.

Additionally, according to updated FDA labeling guidelines effective January 2025, coconut is no longer classified as a tree nut. Package labels will reflect this updated labeling requirement over time.

We kindly ask that no outside food items be brought into Apple Dining Hall. While strict procedures are followed, we cannot guarantee that products from vendors and suppliers are free from the risk of cross-contact during manufacturing, nor can we eliminate the possibility of cross-contact within our facility.

Campus Dietitian Services

Amanda Ceglarz MS, RD, LD serves as our District Dietitian and adds another dimension to our dining services program by working with campus communities to encourage healthy lifestyles and supporting students as the transition to a new dining environment. Amanda enjoys working with college students in general guidance and wellness, medical nutrition therapy, management of food allergies and dietary intolerance, sports and performance nutrition, and navigating campus dining. She provides individual nutrition education and counseling for students, living on and off campus, and group sessions for student organizations, clubs, and athletic teams.
